Guavas vary in size from approximately 1 to 5 inches in diameter. Their exterior skin is green in color and rather dense. Their pulp or meat varies in color from white to a pinkish/reddish hue. Guavas can range from extremely sweet to a tart flavor, depending on their ripeness. They are very juicy, as well. Guavas can be used to make jams, jellies, marmalades, etc. A traditional Cuban dessert called "Guayaba" is a mousse-type dessert paste that is extremely sweet and delicious. One must allow guavas to ripen at room temperature until its skin color changes from green to a yellow color with an aromatic scent.
