


Limes closely resemble their relative, the lemon, except that they are green instead of yellow, and are slightly smaller. They are stronger in flavor, more concentrated, and more acidic than a lemon, though. Their pulp is light green, juicy and has an excellent acid-tart flavor. Average size is approximately 1 ½" in diameter, and the average weight of a lime is ½ - 1 ounce. Limes are best eaten/juiced when they are fresh, but may also be refrigerated up to 7 days. When buying limes, select specimens that are dark green, smaller, thin-skinned, and heavy for their size. Limes are commonly used in desserts, drinks, marinades, etc.
