Zapotes vary in size from approximately 2 ½ to 5 inches in diameter. Their exterior skin color is a light green. The pulp is creamy in texture, and a yellowish-white color with a sweet aroma and flavor. They can be used in shakes, jellies, jams, marmalades, or in fruit salads. They arrive in the summer. Markets usually sell Sapotes while they're still hard, due to the fact that they bruise easily. If this is the case, one let them ripen on the at room temperature for a few days until they give to a gentle squeeze. They are a good source of vitamin C.
